Ingredients:
- 1 cup unsalted butter, softened (225g)
- 1 cup brown sugar, packed (200g)
- 1 large egg, room temperature
- 1 tsp vanilla extract (5ml)
- 2.5 cups all-purpose flour (315g)
- 1 tsp baking soda (5g)
- 1 tsp ground cinnamon (3g)
- 0.5 tsp salt (3g)
- 2 cups apples, peeled and grated (300g)
Instructions:
- Use a box grater to shred the peeled apples.
- Beat the softened butter and brown sugar together using an electric mixer until the mixture is light and fluffy.
- Incorporate the egg and vanilla extract, beating until the batter looks smooth and pale.
- Sift in the flour, baking soda, cinnamon, and salt. Mix on low speed just until the white streaks of flour disappear.
- Gently fold in the grated apples by hand until combined.
- Scoop rounded tablespoons of dough onto parchment-lined baking sheets.
- Bake at 350°F (175°C) for 12–15 minutes until edges are set and the top is mahogany-colored.
