Ingredients:

  • 1 cup unsalted butter, softened (225g)
  • 1 cup brown sugar, packed (200g)
  • 1 large egg, room temperature
  • 1 tsp vanilla extract (5ml)
  • 2.5 cups all-purpose flour (315g)
  • 1 tsp baking soda (5g)
  • 1 tsp ground cinnamon (3g)
  • 0.5 tsp salt (3g)
  • 2 cups apples, peeled and grated (300g)

Instructions:

  1. Use a box grater to shred the peeled apples.
  2. Beat the softened butter and brown sugar together using an electric mixer until the mixture is light and fluffy.
  3. Incorporate the egg and vanilla extract, beating until the batter looks smooth and pale.
  4. Sift in the flour, baking soda, cinnamon, and salt. Mix on low speed just until the white streaks of flour disappear.
  5. Gently fold in the grated apples by hand until combined.
  6. Scoop rounded tablespoons of dough onto parchment-lined baking sheets.
  7. Bake at 350°F (175°C) for 12–15 minutes until edges are set and the top is mahogany-colored.
