Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) brown sugar, packed
- 1/4 cup (50g) granulated sugar
- 1 large egg
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp (5g) ground cinnamon
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
- 1 cup (90g) rolled oats
- 1 cup (140g) Granny Smith apple, peeled and finely diced
- 1 cup (120g) powdered sugar
- 1 tbsp (15ml) milk
- 1/4 tsp (1g) ground cinnamon
- 1/2 tsp (2.5ml) vanilla extract
Instructions:
- Peel the apple and dice it into tiny, uniform cubes (roughly 1/4 inch). Pat dry with a paper towel if exceptionally juicy to prevent the cookies from spreading.
- Cream the softened butter, brown sugar, and granulated sugar until the mixture is pale and fluffy. Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, cinnamon, baking soda, and salt.
- Slowly incorporate the dry ingredients into the wet mixture, then fold in the rolled oats and diced apples by hand until just combined.
- Scoop rounded tablespoons of dough onto parchment-lined baking sheets.
- Bake at 350°F (175°C) for 12-15 minutes until the edges are golden brown.
- Optional: Mix powdered sugar, milk, cinnamon, and vanilla to create a glaze and drizzle over cooled cookies.
