Ingredients:
- 1 cup (220g) unsalted butter, softened
- 1/2 cup (110g) coconut sugar
- 1/2 cup (120ml) unsweetened applesauce
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 3 cups (270g) rolled oats
- 1 tbsp (6g) ground cinnamon
- 1/2 tsp (1g) ground nutmeg
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 cup (150g) diced apples
Instructions:
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
- In a large bowl, cream together the softened butter and coconut sugar until the mixture is pale and fluffy.
- Beat in the egg, unsweetened applesauce, and vanilla extract until the mixture is emulsified and smooth.
- In a separate medium bowl, whisk together the flour, ground cinnamon, ground nutmeg, baking soda, and salt until combined.
- Slowly stir the dry ingredients into the wet base, mixing just until the flour streaks disappear.
- Fold in the rolled oats and finely diced apple chunks using a spatula until evenly distributed.
- Scoop rounded tablespoons of dough onto the prepared sheets, spacing them 2 inches apart.
- Bake for 12–14 minutes until the edges are a light golden brown.
