Ingredients:

  • 1 cup (220g) unsalted butter, softened
  • 1/2 cup (110g) coconut sugar
  • 1/2 cup (120ml) unsweetened applesauce
  • 1 large egg (50g)
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 3 cups (270g) rolled oats
  • 1 tbsp (6g) ground cinnamon
  • 1/2 tsp (1g) ground nutmeg
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 cup (150g) diced apples

Instructions:

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, cream together the softened butter and coconut sugar until the mixture is pale and fluffy.
  3. Beat in the egg, unsweetened applesauce, and vanilla extract until the mixture is emulsified and smooth.
  4. In a separate medium bowl, whisk together the flour, ground cinnamon, ground nutmeg, baking soda, and salt until combined.
  5. Slowly stir the dry ingredients into the wet base, mixing just until the flour streaks disappear.
  6. Fold in the rolled oats and finely diced apple chunks using a spatula until evenly distributed.
  7. Scoop rounded tablespoons of dough onto the prepared sheets, spacing them 2 inches apart.
  8. Bake for 12–14 minutes until the edges are a light golden brown.
