  • 1 cup (150g) Granny Smith apple, peeled and finely diced
  • 1 tsp (5g) ground cinnamon
  • 1/4 tsp (1g) ground nutmeg
  • 1 1/2 cups (180g) old fashioned rolled oats
  • 1 cup (125g) whole wheat pastry flour
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) dark brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp (5ml) pure vanilla extract

Instructions:

  1. Peel and dice the apple into tiny, uniform 1/4-inch cubes.
  2. In a small bowl, toss the apple pieces with the cinnamon and nutmeg until evenly coated and set aside.
  3. In a large bowl, beat the softened butter and dark brown sugar together until the mixture is light and fluffy.
  4. Add the egg and vanilla extract, beating on medium speed until the batter is smooth and velvety.
  5. In a separate medium bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the flour mixture to the wet ingredients on low speed, mixing just until combined.
  7. Fold in the rolled oats using a spatula.
  8. Gently fold in the spiced apple pieces by hand to avoid bruising the fruit.
  9. Drop rounded tablespoons of dough onto prepared baking sheets.
  10. Bake for 14 minutes until the edges are golden and crisp.
