- 1 1/2 cups (180g) old fashioned rolled oats
- 1 cup (125g) whole wheat pastry flour
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
- 1/2 cup (113g) unsalted butter, softened
- 1/2 cup (100g) dark brown sugar, packed
- 1 large egg, room temperature
- 1 tsp (5ml) pure vanilla extract
Instructions:
- Peel and dice the apple into tiny, uniform 1/4-inch cubes.
- In a small bowl, toss the apple pieces with the cinnamon and nutmeg until evenly coated and set aside.
- In a large bowl, beat the softened butter and dark brown sugar together until the mixture is light and fluffy.
- Add the egg and vanilla extract, beating on medium speed until the batter is smooth and velvety.
- In a separate medium bowl, whisk together the flour, baking soda, and salt.
- Gradually add the flour mixture to the wet ingredients on low speed, mixing just until combined.
- Fold in the rolled oats using a spatula.
- Gently fold in the spiced apple pieces by hand to avoid bruising the fruit.
- Drop rounded tablespoons of dough onto prepared baking sheets.
- Bake for 14 minutes until the edges are golden and crisp.
