Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 1/3 cup (65g) granulated sugar
- 1 tsp (5ml) vanilla bean paste
- 1 cup (125g) all-purpose flour
- 1/4 cup (25g) almond flour
- 1/4 tsp (1.5g) salt
- 2 medium (300g) Granny Smith apples, finely diced
- 2 tbsp (30g) unsalted butter
- 3 tbsp (35g) brown sugar
- 1/2 tsp (2g) ground cinnamon
- 1 tbsp (15ml) lemon juice
- 1 tsp (3g) cornstarch
- 1 tbsp (15ml) water
- 2 oz (60g) white chocolate, melted
- 1/2 tsp (1g) cinnamon sugar
Instructions:
- Melt 2 tbsp butter in a saucepan over medium heat. Add diced apples, brown sugar, cinnamon, and lemon juice.
- Sauté for 5-7 minutes until the apples are tender and fragrant.
- Stir in the cornstarch slurry (cornstarch mixed with water). Simmer for another 2 minutes until the mixture transforms into a thick, jammy consistency.
- Remove filling from heat and let cool completely.
- Cream the softened butter and granulated sugar until the mixture is pale and fluffy.
- Beat in the vanilla bean paste.
- In a separate bowl, whisk together all-purpose flour, almond flour, and salt.
- Gradually add the dry ingredients to the wet, mixing on low speed until a soft dough forms.
- Wrap the dough in plastic and refrigerate for 30 minutes.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop 1 tablespoon of dough, roll into a ball, and place on the sheet. Press your thumb or a small spoon into the center to create a deep well.
- Spoon approximately 1 teaspoon of cooled apple filling into each indentation.
- Bake for 12-15 minutes until the edges are a pale mahogany-colored gold.
- Allow to cool on the pan for 5 minutes before transferring to a wire rack.
- Drizzle with melted white chocolate and dust with cinnamon sugar if desired.
