Ingredients:

  • 2 cups (250g) all-purpose flour
  • ¾ cup (150g) granulated sugar
  • 1 tsp (5g) baking soda
  • ½ tsp (3g) salt
  • 1 tbsp (6g) pumpkin pie spice
  • 1 cup (245g) pumpkin puree
  • ½ cup (120ml) vegetable oil
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 1 cup (150g) firm apple, finely diced
  • ½ cup (60g) all-purpose flour
  • ¼ cup (50g) light brown sugar, packed
  • 1 tsp (2g) ground cinnamon
  • 4 tbsp (57g) cold unsalted butter, cubed

Instructions:

  1. Preheat your oven to 375°F (190°C) and line the muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking soda, salt, and pumpkin pie spice until no clumps remain.
  3. Create a well in the center of the dry ingredients. Add the pumpkin puree, oil, eggs, and vanilla extract.
  4. Stir with a spatula until just combined. Stop as soon as no streaks of dry flour remain; the batter should look slightly lumpy.
  5. Gently fold in the diced apples using a lifting motion to avoid deflating the air.
  6. In a small bowl, rub the cold butter into the streusel ingredients using your fingertips until the mixture resembles coarse crumbs.
  7. Divide the batter evenly among the 12 cups.
  8. Spoon a generous pinch of streusel on top of each muffin, pressing lightly.
  9. Bake for 22–25 minutes, or until a toothpick inserted into the center comes out clean and the tops are mahogany-colored.
