- 1 cup (225g) unsalted butter, softened
- 3/4 cup (150g) brown sugar, packed
- 1/2 cup (100g) granulated white sugar
- 2 large eggs, room temperature
- 1 tsp (5ml) pure vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp (5g) ground cinnamon
- 1/2 tsp (3g) baking soda
- 1/2 tsp (3g) salt
- 3 cups (270g) old-fashioned rolled oats
- 1 cup (150g) Granny Smith apple, peeled and finely diced
- 3/4 cup (110g) raisins, plumped in warm water and drained
- 1/2 cup (50g) chopped walnuts
Instructions:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Dice the Granny Smith apples into uniform 1/4-inch cubes and pat them thoroughly with paper towels to remove excess surface moisture.
- In a medium bowl, cream together the softened unsalted butter, brown sugar, and granulated white sugar using an electric mixer until light and fluffy.
- Beat in the eggs one at a time, then stir in the pure vanilla extract.
- In a separate large bowl, whisk together the all-purpose flour, ground cinnamon, baking soda, and salt.
- Gradually add the dry flour mixture to the wet creamed butter mixture, mixing on low speed until just combined.
- Fold in the old-fashioned rolled oats, diced apples, drained raisins, and chopped walnuts by hand.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them 2 inches apart.
- Bake for 12-15 minutes or until the edges are golden brown.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire cooling rack.
