Ingredients:

  • 1/2 cup (113g) unsalted butter, softened
  • 3/4 cup (150g) brown sugar, packed
  • 1 large egg (50g)
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 tbsp (8g) ground cinnamon
  • 2 cups (180g) old fashioned rolled oats
  • 1 cup (120g) Granny Smith apple, finely diced
  • 3/4 cup (85g) walnuts, chopped

Instructions:

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper or silicone mats.
  2. In a large bowl, cream together the softened butter and brown sugar until the mixture looks pale and fluffy.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon, then slowly stir them into the wet mixture.
  5. Lightly toast the chopped walnuts to bring out their oils and add a roasted depth, then set aside to cool.
  6. Using a spatula, fold in the rolled oats, finely diced apples, and toasted walnuts until no streaks of flour remain.
  7. Scoop rounded tablespoons of dough onto the baking sheets, spacing them 2 inches apart.
  8. Bake for 12–14 minutes until the edges are deep golden brown while the centers remain slightly soft.
  9. Let the cookies rest on the pan for 5 minutes before transferring to a wire rack to firm up.
