Ingredients:

  • 1/2 cup (115g) unsalted melted butter
  • 1/2 cup (100g) packed brown sugar
  • 1 large (50g) egg
  • 1 tsp (5ml) vanilla extract
  • 1/2 cup (120g) mashed over-ripe banana
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) salt
  • 1/2 tsp (1g) ground cinnamon
  • 3/4 cup (130g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mash the banana with a fork until it becomes a smooth paste with minimal lumps.
  3. Whisk in the melted butter and brown sugar until the mixture is glossy.
  4. Add the egg and vanilla, whisking until fully emulsified.
  5. Sift in the flour, baking soda, salt, and cinnamon; gently fold the ingredients together with a spatula until no white streaks of flour remain.
  6. Fold in the semi-sweet chocolate chips.
  7. Scoop rounded tablespoons of dough onto a lined baking sheet, spacing them 2 inches apart.
  8. Bake for 10–12 minutes until the edges are deep mahogany and the centers look slightly underbaked.
