Ingredients:
- 1/2 cup (115g) unsalted melted butter
- 1/2 cup (100g) packed brown sugar
- 1 large (50g) egg
- 1 tsp (5ml) vanilla extract
- 1/2 cup (120g) mashed over-ripe banana
- 1 1/2 cups (190g) all-purpose flour
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
- 1/2 tsp (1g) ground cinnamon
- 3/4 cup (130g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, mash the banana with a fork until it becomes a smooth paste with minimal lumps.
- Whisk in the melted butter and brown sugar until the mixture is glossy.
- Add the egg and vanilla, whisking until fully emulsified.
- Sift in the flour, baking soda, salt, and cinnamon; gently fold the ingredients together with a spatula until no white streaks of flour remain.
- Fold in the semi-sweet chocolate chips.
- Scoop rounded tablespoons of dough onto a lined baking sheet, spacing them 2 inches apart.
- Bake for 10–12 minutes until the edges are deep mahogany and the centers look slightly underbaked.
