Ingredients:

  • 1 cup (225g) unsalted butter
  • 8 oz (225g) bittersweet chocolate, chopped
  • 2 tbsp (15g) dry milk powder
  • 3 large eggs, room temperature
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) light brown sugar, packed
  • 2 tsp (10ml) pure vanilla extract
  • 3/4 cup (65g) Dutch-process cocoa powder
  • 3/4 cup (95g) all-purpose flour
  • 1/2 tsp (3g) fine sea salt

Instructions:

  1. Place the butter in a medium saucepan over medium heat. Stir occasionally until melted, foaming, and golden-brown bits form at the bottom with a nutty aroma.
  2. Remove butter from heat immediately. Stir in the dry milk powder and chopped chocolate. Let sit for 2 minutes, then stir until the mixture is smooth and glossy.
  3. In a large mixing bowl, combine eggs, granulated sugar, brown sugar, and vanilla extract.
  4. Whisk the egg and sugar mixture aggressively by hand for 3–5 minutes until the consistency becomes pale, fluffy, and thickened.
  5. Slowly pour the warm chocolate-butter mixture into the egg emulsion, whisking constantly to combine.
  6. Sift in the cocoa powder, all-purpose flour, and fine sea salt.
  7. Use a silicone spatula to fold the dry ingredients in gently until just combined.
  8. Pour the batter into a 9x13 inch pan lined with parchment paper and bake at 175°C for 25 minutes until the edges are set but the center still has a slight wobble.
