Ingredients:
- 1 cup (225g) unsalted butter
- 3/4 cup (150g) light brown sugar, packed
- 1/2 cup (100g) granulated sugar
- 1 large egg (approx 50g)
- 1/4 cup (60ml) pure maple syrup
- 1 tsp (5ml) maple extract
- 1 tsp (5ml) vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1/2 cup (55g) chopped pecans
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) pure maple syrup
- 1 tbsp (15ml) melted butter
- 1 pinch (1g) salt
Instructions:
- Place the butter in a heavy-bottomed saucepan over medium heat. Melt and whisk constantly until small mahogany-colored bits form at the bottom and it smells nutty. Remove from heat and cool for 15-20 minutes.
- In a large bowl, cream together the cooled brown butter, light brown sugar, and granulated sugar until pale and fluffy.
- Beat in the egg, maple syrup, maple extract, and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually stir the dry ingredients into the wet mixture.
- Fold in the chopped pecans if using.
- Cover the dough and refrigerate for at least 2 hours to solidify fats and hydrate the flour.
- Preheat oven to 350°F (175°C). Scoop rounded tablespoons of dough onto parchment-lined baking sheets.
- Bake for 9-11 minutes until edges are golden but centers look slightly underbaked.
- Let cookies firm up on the pan for 5 minutes before transferring to a wire cooling rack.
- Whisk together powdered sugar, 2 tbsp maple syrup, 1 tbsp melted butter, and a pinch of salt. Drizzle the glaze over completely cooled cookies.
