- 2 cups (300g) Granny Smith apples, peeled and micro-diced
- 2 tbsp (25g) dark brown sugar
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (0.5g) ground nutmeg
- 1 tbsp (8g) cornstarch
- 1/2 cup (113g) unsalted butter, softened
- 3/4 cup (150g) packed brown sugar
- 1/4 cup (50g) granulated white sugar
- 1 large (50g) egg, room temperature
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
Instructions:
- In a small bowl, toss the micro-diced apples with 2 tablespoons of brown sugar, cinnamon, nutmeg, and cornstarch. Let the mixture sit for 10 minutes to allow the sugar to draw out moisture and create a spiced syrup.
- In a large bowl, beat the softened butter with the packed brown sugar and white sugar until light, fluffy, and pale (about 2-3 minutes).
- Incorporate the egg and vanilla extract, beating until the batter is smooth and emulsified.
- Whisk together the flour, baking soda, and salt in a separate bowl, then slowly stir into the wet ingredients until just combined.
- Gently fold in the spiced apple mixture using a spatula, being careful not to overmix.
