Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) light brown sugar, packed
  • 1 large egg
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 tsp (3g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) dark brown sugar, packed
  • 1/2 cup (160ml) light corn syrup
  • 2 large eggs
  • 2 tbsp (16g) all-purpose flour
  • 1 tsp (5ml) vanilla extract
  • 1/2 tsp (3g) salt
  • 2 cups (230g) pecan halves

Instructions:

  1. Preheat oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. Cream together softened butter and light brown sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. Stir in flour, baking powder, and salt until a soft dough forms.
  4. Press the dough evenly into the bottom of the prepared pan and bake for 12-15 minutes until the edges are just starting to turn a golden blonde.
  5. In a large bowl, whisk together melted butter and dark brown sugar.
  6. Add corn syrup, eggs, flour, vanilla, and salt. Whisk vigorously until the mixture is smooth and mahogany-colored.
  7. Fold in the pecan pieces using a spatula until completely coated.
  8. Pour the pecan mixture over the pre-baked hot crust, spreading it to the edges.
  9. Bake for 20-25 minutes until set.
  10. Allow the bars to cool and set completely for 2 hours before slicing.
