Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) light brown sugar, packed
- 1 large egg
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1/2 tsp (3g) baking powder
- 1/4 tsp (1.5g) salt
- 1/2 cup (115g) unsalted butter, melted
- 1 cup (200g) dark brown sugar, packed
- 1/2 cup (160ml) light corn syrup
- 2 large eggs
- 2 tbsp (16g) all-purpose flour
- 1 tsp (5ml) vanilla extract
- 1/2 tsp (3g) salt
- 2 cups (230g) pecan halves
Instructions:
- Preheat oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides.
- Cream together softened butter and light brown sugar until light and fluffy. Beat in the egg and vanilla extract.
- Stir in flour, baking powder, and salt until a soft dough forms.
- Press the dough evenly into the bottom of the prepared pan and bake for 12-15 minutes until the edges are just starting to turn a golden blonde.
- In a large bowl, whisk together melted butter and dark brown sugar.
- Add corn syrup, eggs, flour, vanilla, and salt. Whisk vigorously until the mixture is smooth and mahogany-colored.
- Fold in the pecan pieces using a spatula until completely coated.
- Pour the pecan mixture over the pre-baked hot crust, spreading it to the edges.
- Bake for 20-25 minutes until set.
- Allow the bars to cool and set completely for 2 hours before slicing.
