Ingredients:

  • 1 cup (120g) all-purpose flour
  • ½ cup (45g) unsweetened cocoa powder
  • ½ tsp (3g) baking soda
  • ¼ tsp (1.5g) salt
  • ½ cup (113g) unsalted butter, melted and cooled slightly
  • ¾ cup (150g) brown sugar, packed
  • ¼ cup (50g) granulated sugar
  • 1 large (50g) egg, room temperature
  • 2 tsp (10ml) vanilla extract
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Whisk the flour, cocoa powder, baking soda, and salt in a large bowl until no large cocoa clumps remain.
  2. Stir in the melted butter, brown sugar, and granulated sugar until a gritty paste forms.
  3. Add the egg and vanilla extract, stirring just until combined.
  4. Fold in the chocolate chips, stopping immediately once the streaks of flour disappear to maintain the dense texture.
  5. Scoop rounded tablespoons of dough onto parchment-lined baking sheets.
  6. Bake at 350°F (175°C) for 9–11 minutes until the edges are matte and set, but the centers remain slightly soft.
  7. Allow the cookies to cool on the baking pan for 10 minutes to set before transferring.
