Ingredients:
- 1 lb pizza dough, room temperature
- 250g cooked chicken breast, shredded
- 1 tbsp cornmeal
- 1/2 cup buffalo sauce
- 1/4 cup light ranch dressing
- 1/2 tsp garlic powder
- 170g low-moisture part-skim mozzarella cheese, shredded
- 30g blue cheese crumbles
- 1/4 cup red onion, thinly sliced
- 2 tbsp fresh scallions, chopped
Instructions:
- Preheat your oven to 200°C (400°F). If you're using a pizza stone, place it on the middle rack now.
- In a medium bowl, toss the shredded cooked chicken breast with 1/4 cup of the buffalo sauce to seal in moisture.
- Dust your work surface with a little flour and stretch the 1 lb pizza dough into a 12 inch circle. If the dough resists, cover it with a towel and let it rest for 5 minutes.
- Sprinkle the 1 tbsp cornmeal onto your baking sheet or pizza peel.
- Spread the 1/4 cup light ranch dressing over the dough, leaving a 1 inch border.
- Evenly distribute the 170g shredded mozzarella over the ranch. Scatter the buffalo soaked chicken and the 1/4 cup thinly sliced red onion on top.
- Sprinkle the 30g blue cheese crumbles over the chicken.
- Slide the pizza into the oven and bake for 15 minutes until the crust is golden and the cheese is frantically bubbling.
- Remove from oven and immediately drizzle the remaining 1/4 cup buffalo sauce over the top. Garnish with 2 tbsp fresh scallions.
