Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg
  • 1 tsp (5ml) vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 tsp (3g) baking soda
  • 1/2 tsp (3g) salt
  • 1 1/2 tsp (4g) ground cinnamon
  • 1/2 cup (60g) freeze-dried apple bits
  • 24 (approx. 10g each) individually wrapped soft caramels

Instructions:

  1. In a large bowl, beat the softened butter and granulated sugar until pale and fluffy (about 2-3 minutes).
  2. Beat in the egg and vanilla extract until fully incorporated.
  3. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Gradually add the dry mixture to the wet ingredients on low speed. Fold in the apple bits by hand until evenly distributed.
  5. Use a cookie scoop to create balls of dough roughly 2 tablespoons in size.
  6. Flatten a dough ball in your palm, place one unwrapped caramel in the center, and carefully fold the dough around the caramel, pinching the seams tightly and rolling into a smooth sphere.
  7. Place cookies on a parchment-lined sheet, spacing them 2 inches apart.
  8. Bake at 350°F (175°C) for 10–12 minutes until edges are set and just barely golden brown.
