Ingredients:
- 1 cup (225g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 large egg
- 1 tsp (5ml) vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 1 tsp (3g) baking soda
- 1/2 tsp (3g) salt
- 1 1/2 tsp (4g) ground cinnamon
- 1/2 cup (60g) freeze-dried apple bits
- 24 (approx. 10g each) individually wrapped soft caramels
Instructions:
- In a large bowl, beat the softened butter and granulated sugar until pale and fluffy (about 2-3 minutes).
- Beat in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually add the dry mixture to the wet ingredients on low speed. Fold in the apple bits by hand until evenly distributed.
- Use a cookie scoop to create balls of dough roughly 2 tablespoons in size.
- Flatten a dough ball in your palm, place one unwrapped caramel in the center, and carefully fold the dough around the caramel, pinching the seams tightly and rolling into a smooth sphere.
- Place cookies on a parchment-lined sheet, spacing them 2 inches apart.
- Bake at 350°F (175°C) for 10–12 minutes until edges are set and just barely golden brown.
