Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) granulated white sugar
  • 1 large egg
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 2 tsp (6g) cornstarch
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) salt
  • 3/4 cup (130g) white chocolate chips
  • 3/4 cup (140g) candy corn kernels
  • yellow gel food coloring
  • orange gel food coloring

Instructions:

  1. Beat the softened butter and sugar together on medium-high speed until pale and fluffy.
  2. Add the egg and vanilla extract; beat for another 60 seconds until smooth and glossy.
  3. Whisk together flour, cornstarch, baking soda, and salt in a separate bowl, then stir into the wet ingredients until just combined.
  4. Divide the dough into three equal portions: leave one white, tint one yellow, and tint one orange using gel food coloring.
  5. Create a gradient by scooping a small ball of orange dough, yellow dough, and white dough, pressing them together or swirling slightly.
  6. Press 3-4 pieces of candy corn and a few white chocolate chips into the top of each cookie.
  7. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Space cookies 2 inches apart and bake for 8-10 minutes until edges are barely set and tops are matte.
  9. Cool on the pan for 5 minutes before transferring to a wire rack.
