Ingredients:
- 2 1/4 cups (280g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) sea salt
- 1 tbsp (6g) apple pie spice
- 3/4 cup (170g) unsalted butter, softened
- 3/4 cup (150g) packed dark brown sugar
- 1/4 cup (50g) granulated sugar
- 1 large (50g) egg, room temperature
- 2 tsp (10ml) vanilla extract
- 1/2 cup (60g) finely chopped dried apples
- 24 (approx. 150g) caramel squares or bits
- 1/2 tsp (3g) flaky sea salt
Instructions:
- In a medium bowl, whisk together the flour, baking soda, sea salt, and apple pie spice.
- In a large bowl, beat the softened butter with brown and granulated sugars until pale and fluffy, approximately 2-3 minutes.
- Add the egg and vanilla extract, beating on medium speed until fully incorporated.
- Gradually mix in the dry ingredients on low speed until just combined, then fold in the chopped dried apples by hand.
- Scoop 1.5 tablespoons of dough and flatten it into a disk in your palm.
- Place one caramel square in the center of the disk, fold the edges of the dough over the caramel, and pinch the top to seal it into a smooth ball.
- Place dough balls 2 inches apart on a parchment-lined baking sheet.
- Bake at 350°F (175°C) for 9–11 minutes until edges are lightly browned.
- Garnish with flaky sea salt immediately after removing from the oven.
