Ingredients:

  • 1 cup unsalted butter, softened (225g)
  • 1 cup light brown sugar, packed (200g)
  • 1 large egg, room temperature (50g)
  • 1 tsp pure vanilla extract (5ml)
  • 1.5 cups all-purpose flour (190g)
  • 1 tsp ground cinnamon (2g)
  • 1 tsp baking soda (5g)
  • 0.5 tsp salt (3g)
  • 2 cups rolled oats (180g)
  • 1 medium Granny Smith apple, peeled and diced into 1/2 inch chunks (150g)
  • 0.5 cup caramel bits or chips (100g)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and brown sugar for 3 minutes until the mixture is pale and fluffy. Beat in the egg and vanilla extract until fully incorporated.
  3. In a medium bowl, whisk together the flour, cinnamon, baking soda, and salt. Gradually add this to the wet ingredients on low speed until just combined.
  4. Fold in the rolled oats with a spatula until evenly distributed.
  5. Gently stir in the diced apple chunks and caramel bits, taking care not to over-mix.
  6. Using a cookie scoop, drop rounded tablespoons of dough 2 inches apart onto the prepared sheets. Bake for 12 minutes until the edges are deep golden brown but the centers remain soft.
