Ingredients:
- 1 cup unsalted butter, softened (225g)
- 1 cup light brown sugar, packed (200g)
- 1 large egg, room temperature (50g)
- 1 tsp pure vanilla extract (5ml)
- 1.5 cups all-purpose flour (190g)
- 1 tsp ground cinnamon (2g)
- 1 tsp baking soda (5g)
- 0.5 tsp salt (3g)
- 2 cups rolled oats (180g)
- 1 medium Granny Smith apple, peeled and diced into 1/2 inch chunks (150g)
- 0.5 cup caramel bits or chips (100g)
Instructions:
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and brown sugar for 3 minutes until the mixture is pale and fluffy. Beat in the egg and vanilla extract until fully incorporated.
- In a medium bowl, whisk together the flour, cinnamon, baking soda, and salt. Gradually add this to the wet ingredients on low speed until just combined.
- Fold in the rolled oats with a spatula until evenly distributed.
- Gently stir in the diced apple chunks and caramel bits, taking care not to over-mix.
- Using a cookie scoop, drop rounded tablespoons of dough 2 inches apart onto the prepared sheets. Bake for 12 minutes until the edges are deep golden brown but the centers remain soft.
