- 1/2 cup (115g) unsalted butter, melted and slightly cooled
- 3/4 cup (150g) packed light brown sugar
- 1/4 cup (50g) granulated white sugar
- 1 large egg, room temperature
- 1 tsp (5ml) pure vanilla extract
- 1/3 cup (30g) unsweetened cocoa powder, sifted
- 3/4 cup (95g) all-purpose flour
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
- 1/2 cup (85g) semi-sweet chocolate chips
- 1/2 cup (85g) chopped dark chocolate bar
Instructions:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper, leaving a slight overhang on the sides for easy removal.
- Whisk the melted butter, brown sugar, and white sugar in a large bowl until the mixture looks glossy and combined.
- Add the room temperature egg and vanilla extract, beating vigorously for 60 seconds until the batter lightens in color to ensure a shattering crust.
- Sift in the cocoa powder, flour, baking soda, and salt. Use a rubber spatula to fold the ingredients together just until no streaks of flour remain; do not overmix.
- Fold in the semi-sweet chocolate chips and chopped dark chocolate bar.
- Using a 1.5 tablespoon cookie scoop, portion the dough onto the prepared baking sheet.
- Bake for 13 minutes, then allow to cool on the pan for several minutes before transferring to a wire rack.
