Ingredients:

  • 1/2 cup (115g) unsalted butter, melted and slightly cooled
  • 3/4 cup (150g) packed light brown sugar
  • 1/4 cup (50g) granulated white sugar
  • 1 large egg, room temperature
  • 1 tsp (5ml) pure vanilla extract
  • 1/3 cup (30g) unsweetened cocoa powder, sifted
  • 3/4 cup (95g) all-purpose flour
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (85g) semi-sweet chocolate chips
  • 1/2 cup (85g) chopped dark chocolate bar

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper, leaving a slight overhang on the sides for easy removal.
  2. Whisk the melted butter, brown sugar, and white sugar in a large bowl until the mixture looks glossy and combined.
  3. Add the room temperature egg and vanilla extract, beating vigorously for 60 seconds until the batter lightens in color to ensure a shattering crust.
  4. Sift in the cocoa powder, flour, baking soda, and salt. Use a rubber spatula to fold the ingredients together just until no streaks of flour remain; do not overmix.
  5. Fold in the semi-sweet chocolate chips and chopped dark chocolate bar.
  6. Using a 1.5 tablespoon cookie scoop, portion the dough onto the prepared baking sheet.
  7. Bake for 13 minutes, then allow to cool on the pan for several minutes before transferring to a wire rack.
