Ingredients:
- 1/2 cup (113g) unsalted butter, softened
- 3/4 cup (150g) packed light brown sugar
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 1/4 cup (60g) unsweetened applesauce
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) ground cinnamon
- 1/4 tsp (1g) salt
- 1/4 cup (50g) granulated sugar
- 1 tbsp (8g) ground cinnamon
Instructions:
- In a large bowl, beat the softened butter and brown sugar on medium-high until the mixture is pale and fluffy.
- Add the egg and vanilla extract, beating for another 60 seconds until the batter looks smooth and glossy.
- Mix in the unsweetened applesauce until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the dry mixture to the wet ingredients on low speed. Mix only until a soft dough forms; stop as soon as no streaks of flour remain.
- Mix the granulated sugar and cinnamon in a small bowl for the coating.
- Scoop about 1.5 tbsp of dough, roll into a ball, and roll the ball into the cinnamon sugar mixture until fully encapsulated.
- Place balls 2 inches apart on parchment-lined sheets. Bake at 350°F (175°C) for 10-12 minutes.
- Remove when the edges are set but centers are slightly soft. Let them rest on the pan for 5 minutes before transferring to a wire rack.
