Ingredients:
- 3 cups (380g) all-purpose flour
- 1 cup (240ml) warm water
- 2 1/4 tsp (7g) active dry yeast
- 1 tsp (6g) granulated sugar
- 1 tsp (6g) salt
- 1 tbsp (14g) unsalted butter, melted
- 4 cups (950ml) water
- 1/3 cup (40g) baking soda
- 4 tbsp (56g) unsalted butter, melted
- 1/2 cup (100g) granulated sugar
- 1 tbsp (8g) ground cinnamon
Instructions:
- Combine warm water, sugar, and yeast in a bowl and let sit for 5–10 minutes until foamy.
- Stir in the melted butter, salt, and flour until a shaggy dough forms.
- Turn dough onto a floured surface and knead for 5 minutes until smooth and elastic.
- Place in a greased bowl, cover with a damp cloth, and let rise in a warm spot for 60 minutes or until doubled in size.
- Preheat oven to 425°F (218°C).
- Bring water and baking soda to a rolling boil in a medium pot.
- Roll dough into 1-inch thick ropes and cut into 1-inch pieces.
- Drop 10–12 bites into the boiling water for 30 seconds each, then transfer to a parchment-lined baking sheet using a slotted spoon.
- Bake for 10–12 minutes until edges are deep mahogany and centers are firm.
- While hot, toss the bites in melted butter, then immediately toss in the cinnamon sugar mixture.
