Ingredients:

  • 3 cups (380g) all-purpose flour
  • 1 cup (240ml) warm water
  • 2 1/4 tsp (7g) active dry yeast
  • 1 tsp (6g) granulated sugar
  • 1 tsp (6g) salt
  • 1 tbsp (14g) unsalted butter, melted
  • 4 cups (950ml) water
  • 1/3 cup (40g) baking soda
  • 4 tbsp (56g) unsalted butter, melted
  • 1/2 cup (100g) granulated sugar
  • 1 tbsp (8g) ground cinnamon

Instructions:

  1. Combine warm water, sugar, and yeast in a bowl and let sit for 5–10 minutes until foamy.
  2. Stir in the melted butter, salt, and flour until a shaggy dough forms.
  3. Turn dough onto a floured surface and knead for 5 minutes until smooth and elastic.
  4. Place in a greased bowl, cover with a damp cloth, and let rise in a warm spot for 60 minutes or until doubled in size.
  5. Preheat oven to 425°F (218°C).
  6. Bring water and baking soda to a rolling boil in a medium pot.
  7. Roll dough into 1-inch thick ropes and cut into 1-inch pieces.
  8. Drop 10–12 bites into the boiling water for 30 seconds each, then transfer to a parchment-lined baking sheet using a slotted spoon.
  9. Bake for 10–12 minutes until edges are deep mahogany and centers are firm.
  10. While hot, toss the bites in melted butter, then immediately toss in the cinnamon sugar mixture.
