Ingredients:
- 115g unsalted butter, melted and cooled
- 150g packed light brown sugar
- 50g granulated sugar
- 1 large egg (50g), room temperature
- 5ml pure vanilla extract
- 30g Dutch-process cocoa powder
- 125g all-purpose flour
- 3g baking soda
- 1.5g salt
- 130g rainbow chocolate chips (mini)
- 946ml premium vanilla bean ice cream, slightly softened
Instructions:
- Whisk together the melted butter, brown sugar, and granulated sugar in a large bowl until smooth.
- Beat in the egg and vanilla extract on medium speed for 2 minutes until the mixture is pale and fluffy.
- In a separate bowl, whisk cocoa powder, flour, baking soda, and salt, then gradually fold into the wet mixture using a spatula.
- Gently fold in the rainbow chocolate chips until evenly distributed.
- Transfer the dough to a bowl, cover tightly with plastic wrap, and refrigerate for at least 12 hours.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop 2-tablespoon portions of chilled dough, roll into balls, and space them 2 inches apart on the sheet.
- Bake for 10–12 minutes until edges are set but centers remain soft.
- Cool cookies on the pan for 10 minutes before transferring to a wire rack to cool completely.
- Place one cooled brownie cookie flat side up on a tray.
- Scoop vanilla ice cream onto the center and spread evenly toward the edges using an offset spatula.
- Place a second cookie on top and press gently to secure the sandwich.
