Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 large egg (50g)
- 2 tsp (10ml) pure vanilla extract
- 2 cups (250g) all-purpose flour
- 1/2 tsp (3g) baking powder
- 1/4 tsp (1.5g) salt
- 2 tbsp (25g) granulated sugar
Instructions:
- Cream the softened butter and 3/4 cup sugar together until the mixture is pale and fluffy.
- Beat in the egg and vanilla extract until fully emulsified.
- Slowly sift in the flour, baking powder, and salt, mixing on low until a soft dough forms.
- Divide the dough into two discs, wrap them tightly in plastic wrap, and refrigerate for at least 1 hour.
- Preheat your oven to 350°F (175°C).
- Roll the chilled dough out on a floured surface to a thickness of 1/4 inch (6mm).
- Cut out your desired shapes using cookie cutters.
- Roll each cutout in the coating sugar.
- Place on a parchment-lined sheet and bake for 8–10 minutes until the edges are a pale golden brown.
- Remove from oven and allow to cool on a wire rack to finish crisping.
