Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg (50g)
  • 2 tsp (10ml) pure vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1/2 tsp (3g) baking powder
  • 1/4 tsp (1.5g) salt
  • 2 tbsp (25g) granulated sugar

Instructions:

  1. Cream the softened butter and 3/4 cup sugar together until the mixture is pale and fluffy.
  2. Beat in the egg and vanilla extract until fully emulsified.
  3. Slowly sift in the flour, baking powder, and salt, mixing on low until a soft dough forms.
  4. Divide the dough into two discs, wrap them tightly in plastic wrap, and refrigerate for at least 1 hour.
  5. Preheat your oven to 350°F (175°C).
  6. Roll the chilled dough out on a floured surface to a thickness of 1/4 inch (6mm).
  7. Cut out your desired shapes using cookie cutters.
  8. Roll each cutout in the coating sugar.
  9. Place on a parchment-lined sheet and bake for 8–10 minutes until the edges are a pale golden brown.
  10. Remove from oven and allow to cool on a wire rack to finish crisping.
