Ingredients:
- 1 cup (250g) creamy peanut butter
- ½ cup (100g) granulated white sugar
- ¼ cup (50g) brown sugar, packed
- 1 large egg
- 1 tsp (5ml) vanilla extract
- ½ tsp (2.5ml) baking soda
- ¼ tsp (1.5g) fine sea salt
- 2 tbsp (16g) all-purpose flour
Instructions:
- In a large bowl, beat the peanut butter, granulated sugar, and brown sugar together until the mixture looks smooth and slightly pale.
- Add the egg and vanilla extract. Beat on medium-high for 1 minute until a cohesive, glossy paste forms.
- Stir in the baking soda, salt, and flour. Mix just until the flour streaks disappear; do not overmix.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
- Roll the dough into 18 equal balls (approximately 1.5 tbsp each) and place them 2 inches apart on the baking sheet.
- Use a fork to press a criss-cross pattern into the top of each ball, flattening them slightly.
- Bake for 8–10 minutes until the edges are just set.
