Ingredients:

  • 3 lbs slicing cucumbers, thinly sliced
  • 1 medium yellow onion, thinly sliced
  • 1/4 cup pickling salt
  • 2 cups apple cider vinegar
  • 1 cup granulated sugar
  • 1 tsp mustard seeds
  • 1 tsp celery seeds
  • 1/2 tsp ground turmeric
  • 1/2 tsp salt

Instructions:

  1. Toss the sliced cucumbers and onions in a large bowl with the pickling salt. Stir until evenly coated and let sit for 2 hours to draw out excess water.
  2. Drain the cucumber and onion mixture thoroughly in a colander and rinse with cold water to remove excess salt.
  3. In a stainless steel pot, combine apple cider vinegar, sugar, mustard seeds, celery seeds, turmeric, and salt.
  4. Bring the brine to a gentle boil over medium heat, stirring until the sugar is completely dissolved.
  5. Pack the rinsed cucumbers and onions tightly into clean glass jars.
  6. Pour the boiling brine over the vegetables, leaving 1/2 inch of headspace, ensuring chips are completely submerged.
