  • 1/4 cup (55g) unsalted butter, melted
  • 1 large egg
  • 1 tsp (5ml) vanilla extract
  • 1 tsp (5g) pumpkin pie spice
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) salt
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Whisk together the melted butter and packed brown sugar until smooth. Stir in the egg, blotted pumpkin puree, and vanilla extract, beating until the mixture is uniform and velvety.
  2. Sift the flour, pumpkin pie spice, baking soda, and salt directly into the wet mixture. Using a spatula, fold the ingredients together gently until no streaks of flour remain, being careful not to overmix.
  3. Gently stir in the chocolate chips, ensuring they are evenly distributed throughout the dough.
  4. Scoop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing them 2 inches apart. Bake at 350°F (175°C) for 12-15 minutes. Remove when the edges are set and the centers look slightly underdone.
