Ingredients:
- 1 cup (125g) all-purpose flour
- 1/2 cup (115g) pumpkin puree
- 1/2 cup (100g) brown sugar, packed
- 1/4 cup (55g) unsalted butter, melted
- 1 large egg
- 1 tsp (5ml) vanilla extract
- 1 tsp (5g) pumpkin pie spice
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Whisk together the melted butter and packed brown sugar until smooth. Stir in the egg, blotted pumpkin puree, and vanilla extract, beating until the mixture is uniform and velvety.
- Sift the flour, pumpkin pie spice, baking soda, and salt directly into the wet mixture. Using a spatula, fold the ingredients together gently until no streaks of flour remain, being careful not to overmix.
- Gently stir in the chocolate chips, ensuring they are evenly distributed throughout the dough.
- Scoop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing them 2 inches apart. Bake at 350°F (175°C) for 12-15 minutes. Remove when the edges are set and the centers look slightly underdone.
