Ingredients:

  • 2 cups (250g) all-purpose flour
  • 2 tbsp (16g) cornstarch
  • 1/2 tsp (3g) baking powder
  • 1/4 tsp (1.5g) salt
  • 3/4 cup (170g) unsalted butter, chilled and cubed
  • 1/2 cup (100g) cane sugar
  • 1 large egg, room temperature
  • 1 tsp (5ml) pure vanilla extract
  • 1 cup (125g) powdered sugar
  • 2 tbsp (30ml) milk
  • 1/2 tsp (2.5ml) vanilla extract
  • Gel food coloring

Instructions:

  1. In a medium bowl, whisk together the flour, cornstarch, baking powder, and salt.
  2. Beat the chilled cubed butter and cane sugar until the mixture is pale and fluffy (about 2-3 minutes).
  3. Add the egg and vanilla extract, beating on medium speed until fully incorporated and smooth.
  4. Gradually add the dry ingredients on low speed, mixing just until the flour streaks disappear.
  5. Shape the dough into a flat disk, wrap in plastic, and refrigerate for 1 hour.
  6. On a lightly floured surface, roll the dough to a consistent 1/4 inch (6mm) thickness.
  7. Press Halloween cookie cutters firmly into the dough.
  8. Place cookies on a parchment-lined sheet and bake at 350°F (175°C) for 8–10 minutes.
  9. Whisk together powdered sugar, milk, and vanilla extract to create the glaze, add food coloring, and decorate cooled cookies.
