Ingredients:
- 2 cups (250g) all-purpose flour
- 2 tbsp (16g) cornstarch
- 1/2 tsp (3g) baking powder
- 1/4 tsp (1.5g) salt
- 3/4 cup (170g) unsalted butter, chilled and cubed
- 1/2 cup (100g) cane sugar
- 1 large egg, room temperature
- 1 tsp (5ml) pure vanilla extract
- 1 cup (125g) powdered sugar
- 2 tbsp (30ml) milk
- 1/2 tsp (2.5ml) vanilla extract
- Gel food coloring
Instructions:
- In a medium bowl, whisk together the flour, cornstarch, baking powder, and salt.
- Beat the chilled cubed butter and cane sugar until the mixture is pale and fluffy (about 2-3 minutes).
- Add the egg and vanilla extract, beating on medium speed until fully incorporated and smooth.
- Gradually add the dry ingredients on low speed, mixing just until the flour streaks disappear.
- Shape the dough into a flat disk, wrap in plastic, and refrigerate for 1 hour.
- On a lightly floured surface, roll the dough to a consistent 1/4 inch (6mm) thickness.
- Press Halloween cookie cutters firmly into the dough.
- Place cookies on a parchment-lined sheet and bake at 350°F (175°C) for 8–10 minutes.
- Whisk together powdered sugar, milk, and vanilla extract to create the glaze, add food coloring, and decorate cooled cookies.
