Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1/2 tsp (3g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large (50g) egg, room temperature
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tbsp (6g) lemon zest
  • 1/2 tsp (2.5ml) lemon extract
  • 2 tbsp (25g) granulated sugar
  • 1/2 cup (60g) powdered sugar

Instructions:

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt; set aside.
  3. In a large bowl, beat the softened unsalted butter and 3/4 cup granulated sugar until pale and fluffy.
  4. Add the egg, lemon juice, lemon zest, and lemon extract, beating on medium speed until smooth and well-combined.
  5. Gradually stir in the flour mixture, mixing only until the white streaks of flour disappear.
  6. Place the dough in the refrigerator to chill for 30 minutes.
  7. Scoop 1 tablespoon of dough and roll into small balls.
  8. Roll each ball first in granulated sugar until lightly coated, then immediately roll in powdered sugar until heavily coated.
  9. Place on baking sheets and bake for 10 minutes, removing them the moment the edges are set to preserve a chewy center.
