Ingredients:
- 2 cups (250g) all-purpose flour
- 1/2 tsp (3g) baking powder
- 1/4 tsp (1.5g) salt
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 large (50g) egg, room temperature
- 1 tbsp (15ml) fresh lemon juice
- 1 tbsp (6g) lemon zest
- 1/2 tsp (2.5ml) lemon extract
- 2 tbsp (25g) granulated sugar
- 1/2 cup (60g) powdered sugar
Instructions:
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt; set aside.
- In a large bowl, beat the softened unsalted butter and 3/4 cup granulated sugar until pale and fluffy.
- Add the egg, lemon juice, lemon zest, and lemon extract, beating on medium speed until smooth and well-combined.
- Gradually stir in the flour mixture, mixing only until the white streaks of flour disappear.
- Place the dough in the refrigerator to chill for 30 minutes.
- Scoop 1 tablespoon of dough and roll into small balls.
- Roll each ball first in granulated sugar until lightly coated, then immediately roll in powdered sugar until heavily coated.
- Place on baking sheets and bake for 10 minutes, removing them the moment the edges are set to preserve a chewy center.
