Ingredients:
- 1/2 cup unsalted butter, softened but cool
- 3/4 cup granulated sugar
- 1 large egg
- 2 tsp pure vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup powdered sugar
- 2 tbsp milk or water
- 1/2 tsp vanilla extract
Instructions:
- Beat the softened butter and granulated sugar together on medium-high speed until the mixture looks fluffy and pale.
- Incorporate the egg and 2 tsp vanilla extract, beating until the batter is smooth and velvety.
- Sift the flour, baking powder, and salt directly into the wet mixture. Mix on low speed just until the flour streaks disappear.
- Roll the dough out on a lightly floured surface to 1/4 inch thickness and use cookie cutters to create shapes.
- Optional: Chill the cut-out shapes on the baking sheet for 10-30 minutes to ensure sharper edges and prevent spreading.
- Place cookies on a lined baking sheet and bake at 350°F (175°C) until edges are barely golden and centers are set.
- Prepare the glaze by mixing powdered sugar, milk or water, and 1/2 tsp vanilla extract until smooth.
- Apply the glaze to the cooled cookies.
