Ingredients:

  • 1/2 cup unsalted butter, softened but cool
  • 3/4 cup granulated sugar
  • 1 large egg
  • 2 tsp pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup powdered sugar
  • 2 tbsp milk or water
  • 1/2 tsp vanilla extract

Instructions:

  1. Beat the softened butter and granulated sugar together on medium-high speed until the mixture looks fluffy and pale.
  2. Incorporate the egg and 2 tsp vanilla extract, beating until the batter is smooth and velvety.
  3. Sift the flour, baking powder, and salt directly into the wet mixture. Mix on low speed just until the flour streaks disappear.
  4. Roll the dough out on a lightly floured surface to 1/4 inch thickness and use cookie cutters to create shapes.
  5. Optional: Chill the cut-out shapes on the baking sheet for 10-30 minutes to ensure sharper edges and prevent spreading.
  6. Place cookies on a lined baking sheet and bake at 350°F (175°C) until edges are barely golden and centers are set.
  7. Prepare the glaze by mixing powdered sugar, milk or water, and 1/2 tsp vanilla extract until smooth.
  8. Apply the glaze to the cooled cookies.
