Ingredients:
- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 large (50g) egg, room temperature
- 2 tsp (8g) vanilla extract
- 3 cups (375g) all-purpose flour
- 2 tsp (5g) baking powder
- ½ tsp (3g) salt
- 2 cups (240g) powdered sugar
- 2 tbsp (30ml) heavy cream or milk
- 1 tsp (5ml) lemon juice
- 1 tsp (5ml) vanilla extract
- Gel food coloring
Instructions:
- Beat the softened butter and granulated sugar together on medium-high speed until the mixture looks pale and fluffy.
- Incorporate the egg and vanilla extract, mixing until fully emulsified and smooth.
- Whisk the flour, baking powder, and salt in a separate bowl. Slowly add the dry mixture to the wet ingredients on low speed until a soft dough forms.
- Wrap the dough tightly in plastic wrap, flatten it into a disc, and refrigerate for at least 2 hours.
- Preheat oven to 350°F (175°C). Roll the chilled dough on a floured surface to ¼ inch thickness.
- Cut out shapes and place them on parchment-lined sheets. Bake for 8-10 minutes, removing them as soon as the edges are set.
- Whisk powdered sugar, cream, lemon juice, and vanilla until smooth. Divide into small bowls and stir in gel colors.
- Pipe the icing onto completely cooled cookies.
