Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large (50g) egg, room temperature
  • 2 tsp (8g) vanilla extract
  • 3 cups (375g) all-purpose flour
  • 2 tsp (5g) baking powder
  • ½ tsp (3g) salt
  • 2 cups (240g) powdered sugar
  • 2 tbsp (30ml) heavy cream or milk
  • 1 tsp (5ml) lemon juice
  • 1 tsp (5ml) vanilla extract
  • Gel food coloring

Instructions:

  1. Beat the softened butter and granulated sugar together on medium-high speed until the mixture looks pale and fluffy.
  2. Incorporate the egg and vanilla extract, mixing until fully emulsified and smooth.
  3. Whisk the flour, baking powder, and salt in a separate bowl. Slowly add the dry mixture to the wet ingredients on low speed until a soft dough forms.
  4. Wrap the dough tightly in plastic wrap, flatten it into a disc, and refrigerate for at least 2 hours.
  5. Preheat oven to 350°F (175°C). Roll the chilled dough on a floured surface to ¼ inch thickness.
  6. Cut out shapes and place them on parchment-lined sheets. Bake for 8-10 minutes, removing them as soon as the edges are set.
  7. Whisk powdered sugar, cream, lemon juice, and vanilla until smooth. Divide into small bowls and stir in gel colors.
  8. Pipe the icing onto completely cooled cookies.
