Ingredients:

  • 2 cups (192g) superfine almond flour
  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) salt
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter and brown sugar until the mixture looks pale and fluffy.
  3. Add the egg and vanilla extract, beating on medium speed until the batter is smooth and glossy.
  4. Sift in the almond flour, baking soda, and salt. Mix on low speed just until combined.
  5. Fold in the chocolate chips by hand with a spatula until evenly distributed.
  6. Scoop rounded tablespoons of dough (about 1.5 inches) onto the sheets, spacing them 2 inches apart.
  7. Bake for 10–12 minutes. Remove them when the edges are a light golden brown and the centers look slightly underbaked.
