Ingredients:
- 2 cups (192g) superfine almond flour
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) brown sugar, packed
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper.
- In a large bowl, beat the softened butter and brown sugar until the mixture looks pale and fluffy.
- Add the egg and vanilla extract, beating on medium speed until the batter is smooth and glossy.
- Sift in the almond flour, baking soda, and salt. Mix on low speed just until combined.
- Fold in the chocolate chips by hand with a spatula until evenly distributed.
- Scoop rounded tablespoons of dough (about 1.5 inches) onto the sheets, spacing them 2 inches apart.
- Bake for 10–12 minutes. Remove them when the edges are a light golden brown and the centers look slightly underbaked.
