Ingredients:
- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 large (50g) egg, room temperature
- 1 tsp (5ml) vanilla extract
- 2 ½ cups (310g) all-purpose flour
- ½ tsp (3g) baking soda
- ¼ tsp (1.5g) salt
- ½ cup (60g) Halloween-themed sprinkles
Instructions:
- In a large bowl, beat the softened butter and granulated sugar on medium-high until the mixture looks pale and fluffy.
- Add the egg and vanilla extract, beating for another 60 seconds until the mixture is smooth and velvety.
- Lower the mixer speed and gradually add the flour, baking soda, and salt. Mix just until the white streaks of flour disappear.
- Use a cookie scoop to create 24 even balls of dough (about 1 inch in diameter).
- Roll each dough ball in the sprinkle bowl once to coat, then press firmly into the sprinkles to embed them into the surface.
- Place the coated balls on a tray and refrigerate for 15 minutes to prevent spreading.
- Preheat your oven to 350°F (175°C).
- Place chilled balls on the prepared baking sheet, spacing them 2 inches apart.
- Bake for 9-11 minutes until the edges are set but the centers remain slightly soft.
- Let the cookies rest on the hot pan for 5 minutes before transferring them to a wire rack.
