Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large (50g) egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 2 ½ cups (310g) all-purpose flour
  • ½ tsp (3g) baking soda
  • ¼ tsp (1.5g) salt
  • ½ cup (60g) Halloween-themed sprinkles

Instructions:

  1. In a large bowl, beat the softened butter and granulated sugar on medium-high until the mixture looks pale and fluffy.
  2. Add the egg and vanilla extract, beating for another 60 seconds until the mixture is smooth and velvety.
  3. Lower the mixer speed and gradually add the flour, baking soda, and salt. Mix just until the white streaks of flour disappear.
  4. Use a cookie scoop to create 24 even balls of dough (about 1 inch in diameter).
  5. Roll each dough ball in the sprinkle bowl once to coat, then press firmly into the sprinkles to embed them into the surface.
  6. Place the coated balls on a tray and refrigerate for 15 minutes to prevent spreading.
  7. Preheat your oven to 350°F (175°C).
  8. Place chilled balls on the prepared baking sheet, spacing them 2 inches apart.
  9. Bake for 9-11 minutes until the edges are set but the centers remain slightly soft.
  10. Let the cookies rest on the hot pan for 5 minutes before transferring them to a wire rack.
