Ingredients:

  • 1.5 cups (130g) old-fashioned rolled oats
  • 1 cup (120g) whole wheat flour
  • 0.5 tsp (3g) baking soda
  • 1 tsp (3g) ground cinnamon
  • 0.25 tsp (1.5g) salt
  • 0.33 cup (75g) melted coconut oil
  • 0.33 cup (110g) honey
  • 1 large egg
  • 1 tsp (5ml) vanilla extract
  • 1 cup (150g) grated Granny Smith apple

Instructions:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Grate the Granny Smith apple using a box grater and gently squeeze it in a paper towel to remove excess juice.
  3. In a medium bowl, whisk together the rolled oats, whole wheat flour, baking soda, cinnamon, and salt.
  4. In a large bowl, beat the melted coconut oil and honey until smooth.
  5. Add the egg and vanilla extract to the wet mixture, whisking until a smooth emulsion forms.
  6. Fold the squeezed grated apple into the wet mixture, then gradually stir in the dry ingredients until just combined.
  7. Scoop approximately 2 tablespoons of dough per cookie onto the baking sheet and press down slightly to flatten.
  8. Bake for 12–15 minutes until the edges are light mahogany-brown and the centers are set but springy.
