Ingredients:
- 1 cup (225g) full-fat cottage cheese (4% milkfat)
- 0.25 cup (25g) freshly grated Parmesan cheese
- 1 tsp (2g) Everything Bagel seasoning
- 0.25 tsp (1g) sea salt
Instructions:
- Preheat your oven to 350°F (175°C). For a uniform texture, pulse the cottage cheese in a blender for 30 seconds until velvety. Alternatively, leave as is for a rustic, bubbly texture.
- In a small bowl, combine the cottage cheese, freshly grated Parmesan cheese, and seasonings (Everything Bagel seasoning and sea salt).
- Line a large rimmed baking sheet with high-quality parchment paper. Scoop small mounds, approximately 1 tablespoon each, onto the sheet, spacing them at least 2 inches apart.
- Use a small offset spatula or the back of a spoon to flatten each mound into a very thin, translucent circle.
- Bake for 30 to 40 minutes. Monitor visually for mahogany-colored edges and a firm center. Allow to cool completely on the tray to achieve maximum crispness.
