Ingredients:

  • 1.5 lbs chicken breasts
  • 2 tbsp extra virgin olive oil
  • 2 tbsp lemon zest
  • 1 tbsp coarsely cracked black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1.5 tsp sea salt
  • 0.5 tsp dried oregano
  • 2 tbsp fresh lemon juice
  • 1 tbsp unsalted butter, melted
  • 2 tbsp fresh parsley, finely chopped

Instructions:

  1. Preheat your oven to 400°F (200°C). Pat the chicken extremely dry with paper towels to ensure a golden crust and prevent steaming.
  2. In a small mixing bowl, whisk together the olive oil, lemon zest, cracked pepper, garlic powder, onion powder, salt, and oregano to create a thick spice paste.
  3. Rub the spice paste thoroughly under and over the chicken pieces, coating them evenly.
  4. Place the chicken on a large rimmed baking sheet. Bake for 18–22 minutes (for breasts) or until the internal temperature reaches 165°F (74°C) on a meat thermometer.
  5. Remove from oven and finish with a drizzle of fresh lemon juice, melted butter, and a garnish of fresh parsley.
