Ingredients:
- 1.5 lbs chicken breasts
- 2 tbsp extra virgin olive oil
- 2 tbsp lemon zest
- 1 tbsp coarsely cracked black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1.5 tsp sea salt
- 0.5 tsp dried oregano
- 2 tbsp fresh lemon juice
- 1 tbsp unsalted butter, melted
- 2 tbsp fresh parsley, finely chopped
Instructions:
- Preheat your oven to 400°F (200°C). Pat the chicken extremely dry with paper towels to ensure a golden crust and prevent steaming.
- In a small mixing bowl, whisk together the olive oil, lemon zest, cracked pepper, garlic powder, onion powder, salt, and oregano to create a thick spice paste.
- Rub the spice paste thoroughly under and over the chicken pieces, coating them evenly.
- Place the chicken on a large rimmed baking sheet. Bake for 18–22 minutes (for breasts) or until the internal temperature reaches 165°F (74°C) on a meat thermometer.
- Remove from oven and finish with a drizzle of fresh lemon juice, melted butter, and a garnish of fresh parsley.
