Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) packed brown sugar
  • 1/4 cup (50g) granulated white sugar
  • 1 large egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 cup (170g) M&M candies
  • 1 pint (473ml) premium vanilla ice cream

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and white sugar until the mixture is pale and fluffy.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. In a separate bowl, whisk the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet batter until no streaks of flour remain.
  5. Fold in the M&M candies by hand.
  6. Scoop rounded tablespoons of dough onto the sheet, spacing them 2 inches apart.
  7. Bake for 12–14 minutes until the edges are golden and the centers are set but not browned.
  8. Allow cookies to cool completely on the pan, then transfer to the freezer for 30 minutes.
  9. Lay out 6 chilled cookies on a clean surface.
  10. Place a generous, rounded scoop of vanilla ice cream onto the center of 3 cookies.
  11. Gently spread the ice cream toward the edges using the back of the scoop, leaving a small margin.
  12. Top each with a second chilled cookie, pressing down gently until the ice cream reaches the edges.
  13. Wrap each sandwich and freeze until fully set.
