Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) packed brown sugar
- 1/4 cup (50g) granulated white sugar
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 cup (170g) M&M candies
- 1 pint (473ml) premium vanilla ice cream
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter, brown sugar, and white sugar until the mixture is pale and fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet batter until no streaks of flour remain.
- Fold in the M&M candies by hand.
- Scoop rounded tablespoons of dough onto the sheet, spacing them 2 inches apart.
- Bake for 12–14 minutes until the edges are golden and the centers are set but not browned.
- Allow cookies to cool completely on the pan, then transfer to the freezer for 30 minutes.
- Lay out 6 chilled cookies on a clean surface.
- Place a generous, rounded scoop of vanilla ice cream onto the center of 3 cookies.
- Gently spread the ice cream toward the edges using the back of the scoop, leaving a small margin.
- Top each with a second chilled cookie, pressing down gently until the ice cream reaches the edges.
- Wrap each sandwich and freeze until fully set.
