Ingredients:
- 1/2 cup (115g) Extra Virgin Olive Oil
- 3/4 cup (150g) Brown sugar, packed
- 1/2 cup (100g) Granulated white sugar
- 1 Large egg (50g)
- 1 tsp (5ml) Vanilla extract
- 2 cups (250g) All-purpose flour
- 1 tsp (5g) Baking soda
- 1/2 tsp (3g) Fine sea salt
- 1 cup (170g) Semi-sweet chocolate, roughly chopped
- 1 tsp (2g) Flaky sea salt
Instructions:
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
- In a large bowl, whisk together the olive oil, brown sugar, and white sugar. Add the egg and vanilla, whisking vigorously for 2 minutes until the mixture is pale and glossy.
- Sift in the flour, baking soda, and fine sea salt. Use a rubber spatula to fold the mixture together until just a few streaks of flour remain, avoiding overmixing.
- Fold in the chopped semi-sweet chocolate chunks until evenly distributed.
- Scoop rounded tablespoons of dough onto the prepared sheets, spacing them 2 inches apart.
- Bake for 9–11 minutes, or until the edges are golden-brown and the centers still look slightly underbaked.
- Immediately sprinkle with flaky sea salt and allow to cool on the pan for 5 minutes before transferring to a wire cooling rack.
