Ingredients:
- 3 large overripe bananas
- 0.5 cup unsalted butter, melted and cooled
- 0.75 cup light brown sugar, packed
- 1 large egg, room temperature
- 0.25 cup full-fat Greek yogurt
- 1 tbsp pure vanilla extract
- 1.5 cups all-purpose flour
- 1 tsp baking soda
- 0.5 tsp fine sea salt
- 0.5 tsp ground cinnamon
- 1 cup semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with a parchment paper sling for easy removal.
- In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth but with some small, pea-sized chunks remaining.
- Whisk in the melted butter, brown sugar, egg, Greek yogurt, and vanilla extract. Whisk vigorously until the mixture is glossy and fully emulsified.
- Sift the flour, baking soda, salt, and cinnamon directly over the wet ingredients.
- Using a silicone spatula, gently fold the dry ingredients into the wet until just a few streaks of flour remain. Do not overmix.
- Fold in the chocolate chips, reserving 2 tablespoons to sprinkle on top. Pour the batter into the prepared pan and top with reserved chips.
- Bake for 50 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. cool in the pan for 10 minutes before transferring to a wire rack.
