Ingredients:

  • 3 large overripe bananas
  • 0.5 cup unsalted butter, melted and cooled
  • 0.75 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 0.25 cup full-fat Greek yogurt
  • 1 tbsp pure vanilla extract
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp fine sea salt
  • 0.5 tsp ground cinnamon
  • 1 cup semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with a parchment paper sling for easy removal.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth but with some small, pea-sized chunks remaining.
  3. Whisk in the melted butter, brown sugar, egg, Greek yogurt, and vanilla extract. Whisk vigorously until the mixture is glossy and fully emulsified.
  4. Sift the flour, baking soda, salt, and cinnamon directly over the wet ingredients.
  5. Using a silicone spatula, gently fold the dry ingredients into the wet until just a few streaks of flour remain. Do not overmix.
  6. Fold in the chocolate chips, reserving 2 tablespoons to sprinkle on top. Pour the batter into the prepared pan and top with reserved chips.
  7. Bake for 50 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. cool in the pan for 10 minutes before transferring to a wire rack.
