Ingredients:
- 1 box (15.25 oz / 432g) White Cake Mix
- 1/2 cup (113g) Unsalted Butter, softened
- 2 Large Eggs
- 1 package (3 oz / 85g) Orange Gelatin Powder
- 1 tbsp (6g) Fresh Orange Zest
- 1 tsp (5ml) Pure Vanilla Extract
- 1 cup (170g) White Chocolate Chips
- 1/2 cup (60g) Powdered Sugar
Instructions:
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine the softened butter and orange zest. Using a mixer, cream them together until the butter is pale and fluffy.
- Add the eggs and vanilla extract, beating until smooth. Gradually stir in the white cake mix and the orange gelatin powder. Mix on low speed until a thick, vibrant orange dough forms.
- Gently fold in the white chocolate chips by hand to avoid over-mixing.
- Using a cookie scoop, roll the dough into 1.5 tablespoon balls. Roll each ball generously in powdered sugar until fully coated.
- Place the cookies 2 inches apart on a parchment-lined sheet. Bake for 12–14 minutes until the edges are set and the tops have a slight crinkle effect, but centers remain soft.
- Let the cookies cool on the pan for 5 minutes before transferring.
