Ingredients:
- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 large egg
- 2 tsp (10ml) pure vanilla extract
- 2 ½ cups (310g) all-purpose flour
- ¾ tsp (4g) baking powder
- ½ tsp (3g) salt
- 2 cups (240g) powdered sugar
- 2 tbsp (30ml) milk
- 1 tbsp (15ml) light corn syrup
- 1 tsp (5ml) vanilla extract
- Blue or Turquoise gel food coloring
- ½ cup (60g) white sanding sugar
- 1 pack (100g) gummy fish
- 20g sliced almonds
Instructions:
- Beat softened butter and granulated sugar on medium-high until light and fluffy (about 3 minutes).
- Mix in the egg and vanilla extract until fully emulsified.
- Whisk flour, baking powder, and salt in a separate bowl, then gradually add to the wet ingredients on low speed until a soft dough forms.
- Wrap dough in plastic wrap and refrigerate for 1 hour to prevent spreading during baking.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll chilled dough on a floured surface to 1/4 inch thickness and cut out rounds using a 2-inch cookie cutter.
- Bake cookies 2 inches apart for 7-9 minutes until edges are just set but still pale.
- Cool cookies completely on a wire rack.
- Whisk powdered sugar, milk, corn syrup, and vanilla; stir in turquoise gel food coloring.
- Spoon glaze into the center of each cookie and spread to the edges with a toothpick, leaving a small gap for the 'pool deck'.
- Decorate with sanding sugar bubbles, gummy fish, and almond slivers as pool loungers.
