Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg
  • 2 tsp (10ml) pure vanilla extract
  • 2 ½ cups (310g) all-purpose flour
  • ¾ tsp (4g) baking powder
  • ½ tsp (3g) salt
  • 2 cups (240g) powdered sugar
  • 2 tbsp (30ml) milk
  • 1 tbsp (15ml) light corn syrup
  • 1 tsp (5ml) vanilla extract
  • Blue or Turquoise gel food coloring
  • ½ cup (60g) white sanding sugar
  • 1 pack (100g) gummy fish
  • 20g sliced almonds

Instructions:

  1. Beat softened butter and granulated sugar on medium-high until light and fluffy (about 3 minutes).
  2. Mix in the egg and vanilla extract until fully emulsified.
  3. Whisk flour, baking powder, and salt in a separate bowl, then gradually add to the wet ingredients on low speed until a soft dough forms.
  4. Wrap dough in plastic wrap and refrigerate for 1 hour to prevent spreading during baking.
  5. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Roll chilled dough on a floured surface to 1/4 inch thickness and cut out rounds using a 2-inch cookie cutter.
  7. Bake cookies 2 inches apart for 7-9 minutes until edges are just set but still pale.
  8. Cool cookies completely on a wire rack.
  9. Whisk powdered sugar, milk, corn syrup, and vanilla; stir in turquoise gel food coloring.
  10. Spoon glaze into the center of each cookie and spread to the edges with a toothpick, leaving a small gap for the 'pool deck'.
  11. Decorate with sanding sugar bubbles, gummy fish, and almond slivers as pool loungers.
