Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) baking powder
- 1 tbsp (6g) ground cinnamon
- ½ tsp (2g) ground nutmeg
- ½ tsp (3g) salt
- 1 cup (245g) pumpkin purée
- ½ cup (100g) light brown sugar, packed
- 2 large eggs
- ¼ cup (60ml) melted coconut oil
- ¼ cup (60g) plain Greek yogurt
- 1 tsp (5ml) vanilla extract
- 8 oz (225g) light cream cheese, softened
- 2 tbsp (30ml) maple syrup
- 1 tsp (5ml) vanilla extract
- 1 tsp (2g) orange zest
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line the bottom with parchment paper.
- In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Create a well in the center of the dry ingredients and add the pumpkin purée, brown sugar, eggs, oil, Greek yogurt, and vanilla extract.
- Stir with a spatula until just combined; do not over-mix.
- Using a hand mixer, beat the softened light cream cheese until smooth and airy.
- Fold maple syrup, vanilla extract, and orange zest into the cream cheese mixture until velvety.
- Pour half of the pumpkin batter into the prepared loaf pan.
- Dollop the cream cheese mixture over the batter and spread it gently with a spatula.
- Pour the remaining pumpkin batter over the cream cheese layer.
- Bake for 55 minutes or until a toothpick inserted into the center comes out clean.
