Ingredients:

  • 1 cup (245g) pumpkin puree (unsweetened)
  • 1.5 cups (130g) rolled oats
  • 0.25 cup (60ml) maple syrup

Instructions:

  1. Start by setting the oven to 175°C (350°F) and lining a tray with parchment paper.
  2. Stir the pumpkin puree and maple syrup together in a bowl until the mixture is smooth and glossy.
  3. Fold in the rolled oats, stirring until every oat is thoroughly coated.
  4. Let the dough sit for 2 minutes. Note: This lets the oats hydrate so the cookies aren't gritty.
  5. Scoop about 1 tablespoon of dough per cookie onto the baking sheet.
  6. Gently press the tops down with the back of a spoon. Note: These won't spread like traditional butter cookies.
  7. Bake for 12-15 minutes until the edges are set and the tops feel firm.
  8. Let them cool on the pan for 5 minutes before moving them.
