Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking powder
- ½ tsp (3g) baking soda
- 1 tbsp (6g) pumpkin pie spice
- ½ tsp (3g) salt
- 1 cup (245g) pumpkin puree
- 1 cup (200g) granulated sugar
- ½ cup (100g) packed light brown sugar
- ½ cup (120ml) vegetable oil
- 2 large (100g) room-temperature eggs
- 1 tsp (5ml) vanilla extract
- 8 oz (225g) cream cheese, chilled
- ½ cup (115g) unsalted butter, softened
- 3 cups (360g) powdered sugar, sifted
- 1 tsp (5ml) vanilla extract
- 1g salt
Instructions:
- In a large bowl, whisk together all-purpose flour, baking powder, baking soda, pumpkin pie spice, and salt until no clumps remain.
- In the same bowl (or a separate one), beat pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until the mixture is smooth and uniform in color.
- Gently fold the dry ingredients into the wet ingredients until just combined; do not overmix.
- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan and line it with parchment paper.
- Pour the batter into the pan, smoothing the top with a spatula, and bake for 20–25 minutes until the edges pull away from the pan and the center springs back.
- Allow the cake to cool completely in the pan.
- Beat softened butter until creamy, then add chilled cream cheese and beat on medium-high until combined.
- Gradually add powdered sugar, vanilla extract, and salt, whipping on high for 2 minutes until velvety and pale.
- Spread the cream cheese frosting evenly over the completely cooled cake using an offset spatula.
