Ingredients:

  • 1.5 cups (190g) almond flour
  • 0.25 cup (60ml) melted unsalted butter
  • 2 tbsp (30ml) maple syrup
  • 1 tbsp (6g) instant espresso powder
  • 0.25 tsp (1.5g) salt
  • 1 cup (245g) canned pumpkin puree
  • 2 large eggs
  • 0.33 cup (65g) coconut sugar
  • 0.25 cup (60g) plain Greek yogurt
  • 1 tsp (5g) pumpkin pie spice
  • 1 tsp (5g) vanilla extract
  • 0.5 tsp (2.5g) cinnamon
  • 4 oz (115g) low-fat cream cheese, softened
  • 2 tbsp (30ml) maple syrup
  • 1 tsp (5ml) coffee extract
  • 1 pinch (0.5g) salt

Instructions:

  1. Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. Combine almond flour, espresso powder, and salt in a medium bowl.
  3. Stir in melted butter and 2 tbsp maple syrup until the mixture resembles wet sand.
  4. Press the dough firmly and evenly into the bottom of the pan and bake for 8–10 minutes until edges are golden.
  5. Beat pumpkin puree and coconut sugar until smooth in a large bowl.
  6. Add eggs one at a time, beating well after each addition.
  7. Fold in Greek yogurt, pumpkin pie spice, vanilla, and cinnamon until uniform.
  8. Pour the pumpkin mixture over the warm espresso crust and bake for 25–30 minutes until edges are set.
  9. Remove from oven, cool completely, and refrigerate for 2 hours to set.
  10. Whisk together softened low-fat cream cheese, 2 tbsp maple syrup, coffee extract, and salt until smooth.
  11. Spread the glaze evenly over the chilled pumpkin layer and slice into 16 bars.
