Ingredients:
- 1.5 cups (190g) almond flour
- 0.25 cup (60ml) melted unsalted butter
- 2 tbsp (30ml) maple syrup
- 1 tbsp (6g) instant espresso powder
- 0.25 tsp (1.5g) salt
- 1 cup (245g) canned pumpkin puree
- 2 large eggs
- 0.33 cup (65g) coconut sugar
- 0.25 cup (60g) plain Greek yogurt
- 1 tsp (5g) pumpkin pie spice
- 1 tsp (5g) vanilla extract
- 0.5 tsp (2.5g) cinnamon
- 4 oz (115g) low-fat cream cheese, softened
- 2 tbsp (30ml) maple syrup
- 1 tsp (5ml) coffee extract
- 1 pinch (0.5g) salt
Instructions:
- Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
- Combine almond flour, espresso powder, and salt in a medium bowl.
- Stir in melted butter and 2 tbsp maple syrup until the mixture resembles wet sand.
- Press the dough firmly and evenly into the bottom of the pan and bake for 8–10 minutes until edges are golden.
- Beat pumpkin puree and coconut sugar until smooth in a large bowl.
- Add eggs one at a time, beating well after each addition.
- Fold in Greek yogurt, pumpkin pie spice, vanilla, and cinnamon until uniform.
- Pour the pumpkin mixture over the warm espresso crust and bake for 25–30 minutes until edges are set.
- Remove from oven, cool completely, and refrigerate for 2 hours to set.
- Whisk together softened low-fat cream cheese, 2 tbsp maple syrup, coffee extract, and salt until smooth.
- Spread the glaze evenly over the chilled pumpkin layer and slice into 16 bars.
