Ingredients:
- 1 cup (225g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 2 1/2 cups (315g) all-purpose flour
- 1/2 tsp (3g) baking powder
- 1/4 tsp (1.5g) salt
- 4 cups (480g) powdered sugar, sifted
- 3 tbsp (27g) meringue powder
- 6 tbsp (90ml) warm water
- Gel food coloring
Instructions:
- Cream the softened butter and sugar together until the mixture is pale and fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until a soft dough forms.
- Wrap the dough in plastic wrap and chill in the refrigerator for 2 hours to prevent spreading.
- Preheat the oven to 350°F (175°C).
- Roll the chilled dough to 1/4 inch (6mm) thickness on a floured surface.
- Cut out Halloween shapes and place them on a parchment-lined baking sheet.
- Bake for 8-10 minutes, or until the edges are just barely pale golden.
- Let cookies cool on the pan for 5 minutes, then transfer to wire racks to cool completely.
- In a large bowl, combine powdered sugar and meringue powder.
- Add warm water and beat with a mixer until smooth, then divide into bowls and add gel food coloring.
