Ingredients:

  • 1 cup (225g) unsalted butter, softened to room temperature
  • 3/4 cup (150g) granulated sugar
  • 1 large egg (approx. 50g)
  • 1 tsp (5ml) vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1/2 tsp (3g) salt

Instructions:

  1. Beat the softened butter and granulated sugar together on medium-high speed until the mixture is light, pale cream, and fluffy.
  2. Add the egg and vanilla extract, beating on low speed just until the mixture is smooth and unified.
  3. Sift in the flour and salt. Incorporate using a spatula or mixer on the lowest setting until no white streaks remain, taking care not to over-mix.
  4. Roll the dough into a log and refrigerate for 30 minutes to solidify the fats.
  5. Preheat the oven to 350°F (175°C).
  6. Slice the chilled log into 1/4 inch discs and place them on a lined baking sheet.
  7. Bake for 10-12 minutes until the edges are pale gold and the centers smell nutty.
