Ingredients:
- 1 cup (225g) unsalted butter, softened to room temperature
- 3/4 cup (150g) granulated sugar
- 1 large egg (approx. 50g)
- 1 tsp (5ml) vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 1/2 tsp (3g) salt
Instructions:
- Beat the softened butter and granulated sugar together on medium-high speed until the mixture is light, pale cream, and fluffy.
- Add the egg and vanilla extract, beating on low speed just until the mixture is smooth and unified.
- Sift in the flour and salt. Incorporate using a spatula or mixer on the lowest setting until no white streaks remain, taking care not to over-mix.
- Roll the dough into a log and refrigerate for 30 minutes to solidify the fats.
- Preheat the oven to 350°F (175°C).
- Slice the chilled log into 1/4 inch discs and place them on a lined baking sheet.
- Bake for 10-12 minutes until the edges are pale gold and the centers smell nutty.
