Ingredients:
- 1/2 cup (113g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 1/4 cup (60g) strawberry jam (smooth)
- 2 cups (250g) all-purpose flour
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
- 1/2 cup (30g) freeze-dried strawberries, coarsely crushed
- 1 tbsp (8g) powdered sugar
Instructions:
- In a large bowl, beat the softened butter and granulated sugar together until light and fluffy.
- Add the egg, vanilla extract, and strawberry jam. Beat on medium-high for 2 minutes until the mixture is pale and well-emulsified.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Slowly add the dry mixture to the wet ingredients on low speed. Once just combined, fold in the crushed freeze-dried strawberries by hand using a spatula.
- Preheat oven to 350°F (175°C). Scoop rounded tablespoons of dough onto a parchment-lined sheet, spacing them 2 inches apart.
- Bake for 9–11 minutes. Remove when the edges are just barely golden and the centers still look slightly soft.
