Ingredients:

  • 1/2 cup (113g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg (50g)
  • 1 tsp (5ml) vanilla extract
  • 1/4 cup (60g) strawberry jam (smooth)
  • 2 cups (250g) all-purpose flour
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) salt
  • 1/2 cup (30g) freeze-dried strawberries, coarsely crushed
  • 1 tbsp (8g) powdered sugar

Instructions:

  1. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy.
  2. Add the egg, vanilla extract, and strawberry jam. Beat on medium-high for 2 minutes until the mixture is pale and well-emulsified.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Slowly add the dry mixture to the wet ingredients on low speed. Once just combined, fold in the crushed freeze-dried strawberries by hand using a spatula.
  5. Preheat oven to 350°F (175°C). Scoop rounded tablespoons of dough onto a parchment-lined sheet, spacing them 2 inches apart.
  6. Bake for 9–11 minutes. Remove when the edges are just barely golden and the centers still look slightly soft.
