Ingredients:

  • 3/4 cup (150g) granulated sugar
  • 1 large egg (50g)
  • 1 tsp (5ml) pure vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 pinch baking powder
  • 1/4 tsp (1.5g) fine sea salt

Instructions:

  1. Beat the softened butter and granulated sugar together using a hand mixer or whisk until the mixture is pale and fluffy.
  2. Incorporate the egg and vanilla extract, mixing until the emulsion is smooth and no streaks of egg remain.
  3. Sift the flour, baking powder, and salt directly into the wet ingredients. Mix on low speed just until the flour disappears to avoid overmixing.
  4. Dust your workspace with a pinch of flour. Roll the dough out to a precise 1/8-inch thickness.
  5. Use a 2-inch circular cookie cutter to stamp out uniform disks.
  6. Arrange cookies on a parchment-lined baking sheet. Bake at 350°F (175°C) for 8–10 minutes until the edges turn a pale gold.
