Ingredients:

  • 1 cup (225g) unsalted butter
  • 1 cup (200g) packed light brown sugar
  • 1/2 cup (100g) granulated white sugar
  • 2 large eggs
  • 2 tsp (10ml) pure vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) sea salt
  • 2 cups (340g) semi-sweet chocolate chips

Instructions:

  1. Place the butter in a heavy-bottomed saucepan over medium heat. Melt and continue cooking, whisking constantly, until the butter foams, crackles, and develops mahogany-colored bits at the bottom. Remove from heat immediately and let cool for 5 minutes.
  2. Whisk the cooled browned butter with the brown sugar and white sugar until smooth. Add eggs and vanilla extract, beating on medium-high for 2 minutes until the mixture is pale and fluffy.
  3. Sift in the all-purpose flour, baking soda, and sea salt. Fold gently with a spatula until just combined. Stir in the semi-sweet chocolate chips.
  4. Scoop rounded tablespoons of dough onto parchment-lined baking sheets. Bake at 350°F (175°C) for 9–11 minutes until the edges are golden but the centers remain slightly underbaked.
